Asiago, Artichoke & Lentil Salad

It only gets better with time! Prepare in advance for the ultimate flavour.

Ingredients

  • 1 (19 oz/540 mL) can green lentils, drained and rinsed
  • 2 green onions, sliced
  • 1 red pepper, chopped
  • 1 stalk celery, diced
  • 1 (14.75 oz/418 g) jar marinated artichoke hearts, drained
  • ½ cup (125 mL) asiago cheese, shredded
  • ¼ cup (60 mL) olive oil
  • ¼ cup (60 mL) red wine vinegar
  • 1 tsp (5 mL) Dijon mustard
  • ½ tsp (2 mL) oregano leaves
  • ½ tsp (2 mL) salt
  • ½ tsp (2 mL) freshly ground black pepper

Directions

  1. In a large bowl, mix together lentils, onions, pepper, celery, artichokes and cheese.
  2. In another bowl, whisk together oil, vinegar, mustard, oregano, salt and pepper. Add to lentil mixture and toss to coat vegetables.
  3. Serve immediately or cover and refrigerated for up to one day before serving.

Yield: 6 cups (1.5 L)
Serving size: 1 cup (250 mL)
